Purpose

Update onboarding and architecture docs to reflect the current 3-language stack (Kotlin, Python, TypeScript) and Makefile workflows. Close remaining open conductor tracks.

• getting-started.md: Replaced Rust CLI references with make commands, updated prerequisites (Python 3.11+, JDK 25), updated project structure
• tech-stack.md: Added Extraction & Enrichment (Python) section, updated Tooling & Infrastructure
